Jessica Martin will spend Resilience Festival day canning apple sauce, apple chutney and pickled carrots. Pop in and out as you wish to view and participate in the process of preparing ingredients, cooking recipes, filling jars, and waterbath canning them to make them shelf-stable. This will be a casual demonstration, that will be repeated as necessary so that there will be something to see no matter when you stop by. Bring your questions about equipment, process, recipe selection and safety – you can pick Jessica’s brain or check out resources she’s found.

Facilitator Bio: Jessica Martin is a local community member with a strong interest in local and seasonal food. She learned canning relatively recently, and has spent a lot of time learning about the creative and safety sides of home waterbath canning. She hosts annual canning days at her home, where she and her friends mostly recently canned 8 bushels of tomatoes in one day (That’s a lot, trust me!) Jessica also gardens her back yard with her family and housemates, tries to live lightly on the earth, and does what she can to foster the community around her.
